Making a simple ricotta or cream cheese is easier than you think. You may even have the equipment and ingredients you need already kicking around your kitchen. To make cheese at home, locate the following:
1. Whole milk – 1 qt fresh, local
2. Buttermilk – 1 c. active-culture
3. Lemon Juice – 2 tsp or white vinegar will do
4. Salt – 3/4 tsp
5. Heavy bottom saucepan
6. Stock Pot
7. Colander
8. Meat Thermometer
9. Cheesecloth

Collaboration with multiple partners paid rewarding dividends at this year’s Economic Development Association of Canada’s (EDAC) annual awards ceremony.
Over 180 submissions were made and organizers indicated that this year’s national submissions were some of the best ever and highly competitive.
The Invest in Cheese website won the medal for using Digital Media in a niche microsite (in the category of organizations with an annual budget of less than $200,000).
The Award recognizes the website’s use of the latest trends in social media and the way it serves as an online clearinghouse of information and dialogue for the Invest in Cheese project.
