When some people think of cheese, they might think of it on a sandwich or paired with crackers.  But when I think of it, I think of $100 million dollars!

The small scale and artisan cheese industry in Ontario is currently a $300 million category, and over the next decade, this number is expected to grow to $400 million.  With the current market share of the Ontario artisan cheese industry being approximately $5 million, over the next 10 years there is obviously an opportunity to increase the production and distribution of artisan cheese to capture a larger share of the market.
